As we are in a Walnut growing area, we use them instead of Pine Nuts for our pesto. I now almost prefer it.
I've been using a mix of nuts including walnuts, hazelnuts, Brazil nuts and pecans. Pine nuts are lovely but so expensive and we had lots of nuts in the freezer.... It would be great to have walnuts at your disposal all the time!
My favorite substitute for pinenuts is blanched almonds!
Hmm! We will have to try that!
